Chicken Soup for the Soul, Spirit and Senses.

What is it about a cold blustery day that automatically demands that a pot of hearty homemade chicken soup be simmering on the stove?

Try this on on for size.

Chicken Soup

1/2 stick butter

2 lbs boneless skinless chicken breast, cut into small 1 inch cubes

1/4 cup chopped celery

1/4 cup chopped onion

1/4 cup chopped carrots

1 tsp salt

1 tsp pepper

1 tsp garlic, minced

1 tsp poulty seasoning

1 box of creamy chicken soup – 4 cups (Imagine is a great brand)

1 cup whole milk or 1/2 & 1/2

Melt butter in large pot, add chicken. Saute until cooked thru, about 10 minutes. Add vegetables  and cook for additional 10 minutes on med/med-high. Add seasonings and liquids and let simmer for about an hour. (great to toss into crockpot at this point and let cook slow all day). Serve with warm bread and herb butter.
