Once, Twice…Twice Baked Potato.

And I loooooove youuuuuuuu….

How I make my twice baked potato goodness. Feel free to try for yourself.

  • 4 large baking potatoes
  • 2 tbsp olive oil
  • 1 tbsp sea salt
  • 2 tsp minced garlic
  • ½ cup cheddar cheese
  • ½ cup shredded parmesan cheese
  • ½ cup sour cream
  • ¼ cup chives
  • bacon bits, optional

Scrub the potatoes and pierce them many times with a fork. Place in microwave and cook for 15 min on high. let cool for 5 min. Once cooled, rub with olive oil and sprinkle sea salt on them. Place them on a cookie sheet and cook in preheated over (400 degrees) for 10 min, Let cool. Once cooled, slice lengthwise 1/3 off and scoop out potato into a mixing bowl. Add all ingredients and mix until combined. Fill each potato and place back into oven, lower to 350 degrees and cook for 25 more minutes until cheeses are melted and gooey.
