Shortbread Cookie Pie Crust

2 boxes (about 4.2 oz)  of your favorite shortbread cookies, or be brave and make your own.

1 stick unsalted butter, soft or melted

4 tsp sugar

1 tsp vanilla

Add cookies to food processor and process until they are a fine consistency. Add remaining ingredients and process to incorporate. Pat into lightly buttered glass pie dish. Bake at 350 degrees for 10-12 min and fill with desired fillings.
