Yes! We have Fried Banana’s today!

Its Cinco de Mayo! What does that mean?

It means amazing food!

Amazing drinks!

Amazing desserts!

And boy, do I have a dessert for you. I am making a wonderful pastel de queso del sopapilla,  Sopapilla Cheesecake for a ladies group meeting we are having. But for us, here at home, we are having  Fried Bananas with a hint of amazing orange flavor.

I also plan to make a great enchilada dish, thanks to the kind folks at Lawrys.  Maybe I’ll go crazy and whip up some fun margaritas. Who knows, the sky is the limit!

Plátanos Fritos

4 medium ripe bananas

1 cup brown sugar

4 tbsp butter

2 fresh oranges, juiced

1 tbsp grated orange rind

1/2 tbsp Grand Marnier(go crazy, add the whole tbsp)

1/2 cup confectioners sugar

4 generous scoops of Vanilla Ice Cream

4 generous scoops of Orange Sherbet

Peel and cut bananas in half lengthwise, place in heated pan with melted butter and fry on all sides until golden.

Mix orange rind, juiced oranges, Grand Marnier and brown sugar together and pour over top.

Simmer for 10 minutes over a medium heat.

Transfer to serving bowls.

Serve warm with Orange Sherbet and Vanilla Ice Cream. Drizzle with more Grand Marnier and a dusting of confectioners sugar. Garnish with fresh slices of oranges.

Serves 4, unless you are part of our family and then it serves 2 handsomely…lol.
